ProCook 24cm Carbon Steel Pancake Pan - Pancakes aren't just for Shrove Tuesday

It's Pancake Day! Hurrah! And every year I stand in front of my oven for far too long cooking a mountain of pancakes for my large family, and at the end when everyone is full and the last orange has been squeezed and the chocolate sauce wiped away, we say "we should do that more often".

The UK is rare in that we eat pancakes, or crepes, but the majority of us only on one day a year. Pancakes can be part of a healthy varied diet, they're an excellent carbohydrate base and you can top them with pretty much anything you want.



I've previously tried all kinds of pancake fillings and toppings, including All Day Veggie Breakfast Pancakes and Apple, Banana and Cinnamon, as well as a host of more unusual and decadent pancake flavours including ingredients such as Chilli Jam and Lime, Pancetta and Pistacio and Feta Cheese and Mint Pancakes.


Although my favourite will always be the nostalgic plain old pancake topped with fresh squeezed orange or lemon juice and sugar...

ProCook Kitchenware think they know the secret to perfect pancakes using their 24cm Carbon Steel Pancake Pan, and wanted me to share their recipe. I've never made pancakes with vanilla essence myself before, so I'll be trying this myself with some sweet pancakes later...

Super Simple Pancake Recipe - for an indulgent weekend breakfast.

Servings: 16 pancakes

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients

2  whole eggs
400 ml milk
1 tsp vanilla essence
250g (2 cups) self raising flour
75g (1/3 cup) caster sugar

Instructions

1. Add milk, eggs and vanilla to a jug and whisk to add a little air. Sift flour and sugar into a large mixing bowl. Add milk mixture to a well in the centre and whisk until all ingredients are combined and no lumps are visible.
2. Add a little butter or walnut oil to a large frying pan and put onto a medium heat. Take 1/4 of a cup of mixture and pour into the centre of the pan. Cook gently until bubbles appear on the mixture's surface. Turn or flip and cook the other side for a similar time. Add a little more butter or oil and repeat until the mixture is used up.

  77. I like traditional lemon juice and sugar, but if I'm feeling indulgent I have bananas and nutella. Best if you add the sliced banana once you've flipped the pancake, so the bananas warm up and cook slightly.
